Soybeans - Edamame

Last year sometime, on one of our walks at the Biltmore Estate Antler Hill Village, I gleaned some soybean seeds from their harvested fields.  Saved them all year and planted them in the Spring.  They are now ready to harvest.  I thought I might have waited too long because I am now reading that the harvest time is not only when they look plump, but also when the bottom leaves start to turn yellow.  That happened last week or so.  After that "sign" you have 7-10 days before they turn "tough".  I got lucky, I guess, because they are great!!

Boil for 5 minutes

Shell, salt and eat

We get hem shelled and frozen from costco..but tossed with olive oil, parm cheese and salt, spread on a baking sheet and roasted for 15 mintues..fantastic snack!
